Escuminac

Escuminac sells pure maple syrup from Quebec, Canada, with one ingredient in each 200 mL bottle. Great Harvest is rounder and buttery; Late Harvest is darker, with rye and caramel notes.

Escuminac Information

Why does Escuminac sell two maple syrups?

Both are pure maple syrup and nothing else: the ingredient on each label is "Pure Canadian Maple Syrup". What differs is when in the season the sap was drawn, which changes the flavour without any blending or additives.

Great Harvest is drawn mid-season, with rounded, buttery overtones. It suits pancakes, waffles, porridge and yoghurt. Ingredients and current availability are on the Great Harvest product page.

Late Harvest is drawn later and is dark and robust, with rye, caramel and roasted sugar notes. It suits baking, glazes and dressings. Details are on the Late Harvest product page.

Is Escuminac maple syrup certified organic?

Every Escuminac product title says organic. A 2010 Government of Canada release describes the producer as one of Quebec's top five producers of certified organic maple syrup. That record is sixteen years old, and a current certificate from a certifying body has not yet been seen, so the team treats the organic claim as supported but unconfirmed. The label is the authority on certification marks.

Is maple syrup healthier than sugar?

Maple syrup is a single ingredient with no additives, which is a reason some people prefer it. It is still sugar, and the amount you use matters more than which sweetener you choose.
