Manuka Honey
The honey with a number on the jar.
Manuka is made by bees feeding on Leptospermum flowers, and its MGO or UMF grade tells you how much methylglyoxal it holds. Unlike ordinary honey, that activity stays stable in the jar.

What is the difference between MGO and UMF in manuka honey?
MGO gives the methylglyoxal in milligrams per kilogram, from one direct chemical measurement. UMF is four tests reported as one number: methylglyoxal for strength, leptosperin to confirm it really is manuka, dihydroxyacetone (which predicts how it will hold up on the shelf), and HMF to show it wasn't overheated. Both are meaningful; UMF just tells you more.
Is Australian manuka honey as good as New Zealand manuka honey?
Chemically, it can be. Australia has 83 of the world's 87 Leptospermum species, and a study of 80 Australian samples found methylglyoxal up to 1,100 milligrams per kilogram, with 22 samples matching or beating the New Zealand comparison honey. The difference is mostly about certification and naming, which the two countries have disputed.
Can babies have manuka honey?
No. Honey of any kind or grade must not be given to babies under twelve months, because it can carry spores a baby's gut can't yet handle. healthdirect advises against honey for babies under 12 months, and Australian medicines containing honey must say so on the label. That includes honey stirred into food or put on a dummy.
What MGO number should I buy?
There's no research-based number to aim for if you're eating it, because the grade measures what the honey does in a lab dish, not what it does once you swallow it. What a higher grade reliably gives you is a stronger flavour. Choose the grade that suits you and check the testing method.
