Description
Spiral Organic Tahini is unhulled tahini: sesame paste made from the whole seed, hull and all, slow ground to a thick, dark, pourable paste. Leaving the hull on makes it deeper and more assertive than a pale hulled tahini, just what you want in hummus and baba ganoush, whisked with lemon juice into a sauce for falafel, or spread on toast with honey. It comes in a 375 g jar.

Suggested Use
Stir the jar well before you use it, because the oil separates and sits on top; work it back in from the bottom with a sturdy spoon. For a tahini sauce, whisk it with lemon juice, a little garlic and cold water and keep adding water a spoonful at a time: it will seize and go stiff before it loosens and turns pale and pourable, which is normal. Use it in hummus and baba ganoush, over roast cauliflower, pumpkin and eggplant, in dressings, in tahini cookies and halva, or spread on toast with honey or date syrup.
Storage
Keep the jar closed in a cool, dry cupboard and stir it back together after each use. Follow the storage and after opening directions on the pack.

Tahini is simply sesame seeds ground until they pour. Choose hulled for a paler, milder paste, unhulled for a darker, stronger one, or black tahini made from black sesame.

Common questions
What's the difference between hulled and unhulled tahini?
The hull is the seed coat. Hulled tahini is made from seeds with the hull removed, so the paste is paler, smoother and milder. Unhulled keeps the hull on, which makes it darker and stronger tasting. Both are just ground sesame, and neither is the right one. It comes down to your recipe and your taste.
Is tahini regulated as a supplement in Australia?
No. It's a food, covered by the Australia New Zealand Food Standards Code rather than the therapeutic goods rules, and there's no entry for tahini on Australia's permitted ingredients list (Schedule 1). Sesame is listed separately as SESAMUM INDICUM (item 4510), but that covers its use in listed medicines and doesn't make tahini a therapeutic product.
