Description
Planet Organic Rosemary is certified organic rosemary leaf, dried whole and packed in a 16 g glass shaker jar with nothing else in it. Dried rosemary keeps the resinous, piney, faintly lemony scent of the fresh herb in a more concentrated form, and the stiff needle shaped leaf holds its flavour through long cooking where softer herbs fade. It is the herb for lamb, for roast potatoes, for focaccia and for anything that goes into a hot oven for an hour.

Suggested Use
Crush the leaves between your fingers as they go in, which releases the oils, and add rosemary early in the cooking with the oil or the fat so the flavour carries through the dish. On lamb, chicken and roast vegetables, scatter it over with salt and olive oil before they go into the oven. Dried rosemary is stronger by volume than fresh, so start with less than a recipe calls for in fresh leaves and taste as you go.

Common questions
What's the difference between rosemary oil and rosemary leaf?
They're different products made from the same plant, and the Australian rules list them separately. The leaf is the dried herb you cook with, and it's also used as an extract in capsules and teas. Rosemary oil is the concentrated essential oil, and it has its own rules about what it can contain. The pack tells you which one you have.
Why do the rules cap safrole, camphor and cineole in rosemary?
Australia's permitted ingredients list (Schedule 1) treats those three compounds as markers of the ingredient, so a rosemary product has to contain them. The rules then limit how much of each a listed medicine can contain, with different caps for products you swallow and products for your skin. It's a rule about what's in the bottle and how it's packaged, not a statement about what rosemary does.
