Description
These are whole dried flowers of the butterfly pea, Clitoria ternatea, certified organic and packed loose in a glass jar with nothing else added. Steeped in hot water they release a deep, saturated blue, and the flavour underneath is mild and faintly earthy rather than floral or perfumed. The colour is the point: it is naturally caffeine free as a tea, and the strained brew shifts from blue to purple or pink the moment lemon or any other acid goes in, which is why it turns up in rice, batters, icing, lattes and cocktails.

Add lemon or lime to shift the colour from blue towards purple. The strained liquid can be used in place of water to colour rice, batters, icing and drinks.
