Description
Macro Mike Protein Cookie Baking Mix in Choc Chip is a dry baking mix built on almond protein, tapioca and rice flour and faba bean protein, with dairy free choc chips through it and coconut nectar and monk fruit extract for sweetness. You add plant milk, roll the dough into ten balls and bake them for eight to ten minutes, so it stands in for a packet of bought cookies for a lunchbox, an afternoon snack or something to have with coffee.

Suggested Use
Preheat a fan forced oven to 200 degrees Celsius and pour the baking mix into a large bowl. Slowly add 80 to 90 mL of plant based milk and hand mix until a smooth dough forms. Divide the dough into 10 equal balls, dampening your hands if the dough sticks. Lightly oil a non stick tray and press each ball into a flat cookie about 6 cm across. Bake for 8 to 10 minutes and allow the cookies to cool; they may be soft at first and will firm up as they cool. Store in an airtight container in the fridge for 3 to 5 days, or freeze for later.
