Description
Lotus Xanthan Gum is a single-ingredient food thickener and binding agent, listed on the panel as xanthan gum (415). It is the standard structural ingredient in gluten-free baking: gluten-free flours have no protein network to trap gas and hold crumb together, and a small amount of xanthan gum does that job instead. It also thickens cold liquids without heating and stays stable across a wide temperature range, which is why it turns up in dressings and frozen desserts. Supplied in a 100 g resealable pack. Work about half a teaspoon per cup of flour into a gluten free cake or bread so the crumb holds together instead of crumbling, or whisk a pinch into a dressing or a sauce to stop it separating.

Serving Suggestion
Use sparingly. Whisk it through the dry ingredients of a gluten-free flour blend before liquid is added so it disperses rather than clumping, or blend it into liquids while they are moving. It also works as a thickener in salad dressings, mayonnaise, sauces, gravies, ice cream and sorbet, and as a stabiliser in smoothies. Follow the quantity your recipe specifies, xanthan gum is used in fractions of a teaspoon per cup of flour, and too much makes a gummy result.
