Description
Carwari Organic Red Miso Paste is made the traditional way from organic soybeans, organic rice koji and sea salt, fermented for longer than a white miso, which is where its deep red colour and strong savoury flavour come from. It is unpasteurised and comes in a generous 500 g tub. Stir it into dashi or stock off the boil for miso soup, or use it in marinades, glazes, dressings, braises and grilled aubergine.

Suggested Use
For miso soup, slacken a spoonful with a little warm dashi or stock, then stir it back into the pot off the boil. It also works in marinades for fish and chicken, in glazes for grilled aubergine, in dressings thinned with rice vinegar and mirin, and stirred through braises and ramen broth. It is a salty seasoning used in small amounts.
