Description
Bob's Red Mill Xanthan Gum is a fine powder that thickens, stabilises and emulsifies (food additive 415), and it is a quiet hero of the pantry. It is made by fermentation with the bacterium Xanthomonas campestris, then dried and milled. In baking it binds doughs and batters so they hold their shape and rise, and in the kitchen it thickens sauces and keeps dressings smoothly mixed.
