Description
Bob's Red Mill Organic Dark Rye Flour is stone milled from whole rye berries, so the bran and the germ stay in and the flour keeps its deep colour and hearty flavour. It is the flour for dense, dark, robust breads such as peasant style loaves, pumpernickel and rye sourdough, used on its own or blended with a wheat flour for a lighter crumb. Rye contains gluten, so this is not a wheat free or gluten free flour. It comes in a 567 g pack.
Product Strengths
- One ingredient: organic whole grain rye.
- Stone milled, with the bran and germ left in.
- Carries the USDA Organic seal.
- For dense, dark breads, pumpernickel and rye sourdough.
- 567 g pack, about 19 serves of 30 g.
Suitable For / Not Suitable For
Suitable for: Bakers making dark rye breads, sourdough and rye crackers.
Not suitable for: Anyone with an allergy to the listed ingredients; anyone on a gluten free diet, because rye is a gluten containing cereal; and anyone avoiding wheat, which the pack lists as a possible trace.
Ingredients
- Organic whole grain rye.
Nutrition Information
| Average quantity | Per serve (30 g) | Per 100 g |
|---|---|---|
| Energy | 460 kJ | 1,530 kJ |
| Protein | 4 g | 13.3 g |
| Fat, total | 0 g | 0 g |
| Fat, saturated | 0 g | 0 g |
| Carbohydrate | 23 g | 77 g |
| Sugars | 0 g | 0 g |
| Sodium | 0 mg | 0 mg |
Serving size 30 g. Servings per pack about 19.
Suggested Use
Replace part or all of the wheat flour in a bread recipe. An all rye dough is dense and sticky and suits a tin loaf or a pumpernickel; one part rye to two or three parts bread flour gives a lighter, more open crumb. It also works in rye crackers, blinis, dark biscuits and as a thickener for hearty soups.
Allergens
Contains gluten, from rye. May contain traces of wheat. Always review label for full list of ingredients.
Storage
Store in a cool, dry place away from direct sunlight and heat. Refrigerate or freeze after opening to keep it fresh for longer. The best before date is printed on the pack.
Disclaimer
Always read the label and follow the directions for use. This information is a guide only, and the pack is the authority on ingredients, nutrition and allergens.
