What is apple cider vinegar?
Apple cider vinegar is twice-fermented apple juice, a tangy kitchen staple. Most people take 15 to 30 mL diluted in water with a meal, which is exactly how the research used it.

How the forms compare
Common questions
Are capsules as good as the liquid?
Usually not, and this is the most useful question here. The trials that found an effect used 15 to 30 mL of liquid, which gives you 750 to 1,500 mg of acetic acid. The vinegar pills used as the placebo in those same trials had 0.025 to 0.045 g, about 1 to 2% as much. If a capsule doesn't state its acetic acid content, there's no way to know if it reaches a trial dose, and most don't state one.
Does it help with weight?
A little, for a short time, and here's exactly where that stands. A 2025 review of 10 trials in 789 adults found small reductions in weight, BMI and waist size, best at 30 mL a day and mostly within 12 weeks. But the most publicised trial in this area, the one behind the 6 to 8 kg headlines, was retracted in September 2025 because its analyses couldn't be repeated and its statistics were unlikely. So the evidence has just lost one of its key pieces.
Will it wreck my teeth?
It can, and it's a real risk. In a randomised trial where dentists didn't know who took what, 3.6 g of acetic acid a day for eight weeks raised enamel wear scores by 18%, while the pill group's scores didn't change. Enamel doesn't grow back. Dilute it properly, drink it with a meal instead of sipping through the day, and don't brush your teeth straight afterwards.
Does the mother matter?
No one knows, and we'd rather say so. We haven't found a human study comparing raw unfiltered vinegar with filtered. The trials measured acetic acid, and both types have it. The mother isn't a proven probiotic either, so we won't make gut flora claims for it. If you like the raw version, buy it, just not because of evidence that doesn't exist.
Is it good for a healthy person?
The evidence is thinner than you'd think. The blood sugar benefit shows up mostly in people who already have a diagnosed metabolic condition, and one review found that in apparently healthy people, apple cider vinegar raised fasting blood glucose rather than lowering it. The after-meal effect is the part that holds up more generally, so take it with food and keep your expectations there.
