Lemon Glazed Sweet Potatoes

  • 1 kilo Sweet Potatoes (about 3 medium sized)
  • 1 tbsp Unsalted Butter/Coconut Oil (Dairy Free Option)
  • 2 tbsp Dark Brown Sygar/Coconut Sugar (Low GI Option)
  • 1/2 cup Fresh Lemon Juice (from about 3 lemons)
  • 1/8 tsp Ground Cinnamon
  • 1/8 tsp Himalayan Salt
  1. Heat the oven to 160C
  2. Peel the Sweet Potatoes and cut them into 2 cm thick slices.
  3. Grease a 20-x-30 cm baking dish with the butter.
  4. Arrange the sweet potato disks in a single layer in the pan.
  5. Mix the brown sugar, lemon juice, cinnamon, and salt in a small bowl, and pour the glaze mixture evenly over the potatoes.
  6. Cover the baking dish with aluminum foil, and bake until the potatoes are fork-tender, about 45 minutes.
  7. Remove the foil and cook for about 5 more minutes, until the glaze has thickened and become syrupy
