Cashew nut cheese is so easy to make and has a delicious nutty and cheesey flavour! It’s a wonderful and nutritious substitute to normal dairy cheese, great for those looking for a healthier alternative or may be intolerant to lactose containing foods. In fact, 75% of the world’s population has mild to severe lactose intolerances. So if this includes you why not try making your own healthy cheese? Cashews are abundant in heart-healthy fatty acids, antioxidants, protein, phytochemicals and magnesium.

Easy Cashew Nut Cheese

  • 2 cups of raw cashews – soak for 2-6 hours in water
  • 3 tbsp lemon juice
  • ½ cup nutritional yeast - Bragg's Nutritional Yeast Seasoning is a great choice (available from Mr Vitamins)
  • 1 clove fresh garlic
  • Salt and pepper to taste
  • Optional: 1 tbsp of herbs such as parsley (dill or rosemary)
  1. Rinse cashews
  2. Place all of the ingredients into a food processer or blender and pulp until a smooth and creamy texture is achieved. You may like to add extra water or lemon juice for a thinner consistency.
  3. That’s it! Enjoy!

Tips for buying cashews:

Look for plump cashews (preferably organic) which all have the same colour. Do not buy shriveled cashews as these may have lost their freshness and quality. The nut should taste slightly sweet and nutty. If the flavor is a strong bitter taste then they have gone rancid and should not be used. Always store cashews in an airtight glass jar in the fridge to preserve the good fats and oils.
