Description
Organic Mugi Miso is a fermented soybean paste made by steaming soybeans and barley and allowing it to sit in cedar vats for at least 2 years.
This Miso is also popularly referred to as 'country style Miso' because of barley's unique and colloquial flavour and contains a higher percentage of protein than rice giving barley Miso a stronger and deeper flavour.
Benefits
The longer fermentation means this Miso contains more enzymes. During fermentation, the complex proteins, oils and carbohydrates of grains and soybeans are broken down into more readily digestible amino acids, fatty acids and simple sugars. Our misos are naturally fermented in cedar kegs, making them a traditional Japanese food. They also contain living enzymes, which aids digestion and provides a nutritious balance of natural carbohydrates, protein, essential oils, vitamins and minerals.
