Description
Lotus Guar Gum is milled from the guar bean and is used in gluten free baking to do part of the job gluten would otherwise do. Added in small quantities to a gluten free flour it thickens, stabilises and emulsifies a batter, so breads, cakes, biscuits and muffins hold together instead of crumbling. It is also a plain thickener for sauces and dressings.
Product Strengths
- Use it in home-made ice cream and plant milks to keep them smooth.
- Single ingredient: guar gum (E412), with nothing added.
- Replaces some of the structure that gluten gives, so gluten free baking binds rather than crumbles.
- Thickens, stabilises and emulsifies, and works in cold liquids as well as hot.
- Gluten free, dairy free, a source of fibre and suitable for vegans.
- A little goes a long way: guar gum is used in very small amounts relative to the flour.
