Sauteed Kale with Vegetables

  • 4 cups of kale (shredded leafy parts only)
  • ½ cup of baby carrots (sliced lengthwise (slice thinly so they cook quickly))
  • 3 Scallions or green onions (chopped into ½ inch pieces)
  • 1 tbsp of Olive Oil
  • 1 tbsp of Soy sauce (Low Salt and/or Wheat Free – Optional)
  1. Shred kale by pulling the leaves from the stem then shredding the leaves into 1cm pieces.
  2. In a large pan add the Olive oil, Carrots and Scallions.
  3. Saute on medium for 5 minutes or until the carrots are soft
  4. Add in , Soy sauce and mix. Add in Kale.
  5. Mix together and on medium until Kale starts to soften. About 5 – 7 minutes.

Makes a great side dish and mixes well with fish or tofu.
