Lecithin granules are derived from soya beans, and are an important dietary source of phosphatidylcholine.
Phosphatidylcholine is a key component of cell membranes, including those of the nervous system, where it forms part of the myelin sheath that surrounds nerve cells.
Lecithin has emulsifying properties (in other words, it helps oils and water to mix), so it is believed to support liver and gall bladder function, and aid the breakdown of fats and cholesterol.
Sprinkle 1 tablespoonful of lecithin onto cereal or blend into a milkshake or smoothie.
