My Raw Chocolate Valentine

With Valentine’s Day upon us, why not treat the loved ones in your life to some raw chocolate that is not only easy and delicious to make, but also has health boosting properties?

Raw chocolate is:

  • Full of antioxidant and mineral rich cacao powder
  • Bursting with healthy fats from the cacao and coconut trees
  • Lightly sweetened with natural sugars
  • Dark, delicious and full of flavour
  • Contains no dairy, artificial colours, flavours, emulsifiers or hidden numbers

  • ¼ cup Coconut Oil
  • 2 tbsp/30 gms Cacao Butter
  • 2 tbsp Raw Honey or Maple Syrup or Rice Syrup or a few drops of Stevia
  • ½ cup Raw Cacao Powder
  • Generous Pinch Sea or Himalayan Salt
  • frozen raspberry pieces and shredded coconut
  • chopped nuts and sea salt
  • mint or orange essence
  • goji berries vanilla,
  • crushed coffee beans
  • ginger or chilli powder – let your imagination run wild.

  • In a heatproof bowl over a saucepan of simmering water, gently melt coconut oil and cacao butter.
  • Remove from heat and whisk in sweetener of choice until mixed well.
  • Quickly stir in cacao powder and salt until all has been incorporated.
  • Pour into silicon chocolate moulds or onto a paper lined biscuit tray, add flavours if desired, and place in freezer to set.

Makes about a dozen chocolates using a silicon mould tray, or a small tray of chocolate bark, or plenty as a strawberry dipping sauce!
