Breastfeeding Friendly Cookies

Ingredients

  • 2 1/2 cups of steel cut oats/rolled oats/gluten free oats
  • 4 tablespoons ground flax seeds
  • 1/2 cup filtered water
  • 6 tablespoons extra-virgin coconut oil
  • 3/4 cup coconut sugar or an alternative
  • 1/4 cup brewer's yeast
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon himalayan salt/sea salt
  • 2/3 cup dark chocolate chips optional

Method

  • preheat oven to 180C
  • combine flaxseed and water well
  • add in coconut oil, coconut sugar, brewers yeast, vanilla extract, baking soda and salt
  • combine well
  • stir in 1/2 cup oats
  • mill the remaining oats into flour and add
  • finally stir in chocolate chips
  • form into balls on lined baking tray, and use fork to press into cookie shape
  • bake for 10-12 minutes
  • allow to cool and enjoy!
