Beetroot and Cacao Cupcakes - what a combo!

These wonderful cupcakes are full of goodness and deliciousness and are also gluten free, wheat free, dairy free and sugar free! The recipe contains beetroot and cacao, together increasing energy and stamina, reversing risk of cancer and improving liver function. In addition, the cupcakes are high in fibre, protein, essential fats, vitamins and minerals. They are quick and simple to make and definitely a healthier version to any ordinary chocolate cake or cupcakes without the guilt. What more could you want in a cupcake??

Beetroot and Cacao Cupcakes - what a combo!

  • 1/2 cup cacao powder
  • 3 small beetroots
  • 2 cups of almond meal (coconut flour or any other flour. However almond meal and/or coconut flour work the best and are the healthiest option.)
  • 3 eggs
  • 3 tbsp rice malt syrup (can also use honey, agave, coconut sugar, stevia or maple syrup)
  • 1/2 cup oat milk (can also use any other nut milks, soy milk or dairy milk)
  • 1/2 cup coconut oil (melted)
  • 1 teaspoon of vanilla essence
  • 1/4 tsp bicarb soda
  • 1 pinch of himalayan salt
  • 2 tsp cinnamon

  • Icing:
  • ******
  • 1.5 avocados
  • 1/5 banana
  • 2 tbsp honey (agave, coconut sugar or maple syrup. Can also use a pinch of stevia.)
  • 1/4 cup cacao powder
  1. Begin by preheating oven to 175 degrees celcius.
  2. Grate beetroots and place in a large mixing bowl. Combine all other ingredients with the beetroot and mix until smooth.
  3. Grease cupcake holders with olive oil or coconut oil and pour the cake batter into it.
  4. Bake for approximately 25 minutes. However, this may depend on the thickness of the cake or cupcakes.
  5. While the cupcakes are baking away it’s time to make the icing!
  6. Place all the icing mixture together in a blender and blend until creamy smooth. Easy! A stick blender will work just as fine too.
  7. When the cupcakes are ready, leave to cool before topping with icing.
