Here's something to get your tastebuds tingling!  Gluten and Wheat Free, these  yummy muffins are not only delicious but full of good nutrition too.

Healthy Coconut, Carrot and Apple Muffins

Ingredients
  • 1 cup coconut flour
  • ½ cup coconut sugar
  • 1 tsp baking powder
  • Pinch of salt
  • ½ cup sultanas or chopped dates
  • 1 cup grated carrot
  • 1 tsp chia seeds (optional)
  • 1 cup grated apple
  • ½ cup water or milk
  • ½ cup virgin coconut oil
  • 6 eggs
  • Flaked or shredded coconut to garnish
Method
  1. Mix dry ingredients in one bowl and wet ingredients in another
  2. Mix the wet ingredients into the dry, adding more water if needed
  3. Spoon mixture into muffin tray or individual paper wrappers and garnish with the flaked or shredded coconut
  4. Bake at 180°c for 30 minutes
  5. Test with skewer. If necessary, cook a little longer
